Assalamualaikum wr.wb in Semester 5 im back to campus and for this semester we gonna learn about pastry bakery. For this semester there are so many things that we have to do, for example like we have to make a dish or we called it personal cooking, steward that would be lottery every day, expalined about food material in a power point, etc.
And for today im gonna make Tarlet, and there is a story about Tarlet.
Tart can be
translated into cake or tart, because the two are the same except the
Pie which usually covers the cake itself while Tart leaves it open.
Tart is thought to come from the tradition of laying food, or being a cake-making product in the Middle Ages. estimated to be first used in 1550, about 200 years after pie. in this period, they were seen as popular cuisine among the nobility, in contrast to the views of ordinary people. although
initially savory with meat content, culinary tastes make this cake
replaced with many sweet and sweet fruit and pudding.

Ingredients Sugar Dough:
- 300 gr flour
- 2 sdm milk powder
- 160 gr Butter
- 2 pcs egg
- 1 Pinch Garam
- 1 sdm Gula
Filling Tart/Cheese Cake
- 600 gr Creme Cheese
- 100 gr Sugar
- 2 tblsp Flour
- 2 pcs Whole Egg
- 2 pcs Egg Yolk
- 80 gr Heavy Cream
- 2 tsp Lemon Zeist
Frosting
- 160 gr Heavy Cream
- 20 gr Symple Syrup
- 6 gr Gelatine
- 2 tsp Biji Selasih
Steps how to make Cheese Tarlet:
- For make sour dough we used Straight Dough Method, first step is you must be mix all dry ingredients and until well mixed then add the wet dough.
- After the dough is ready, roll the dough with rolling pin until the dough becomes thin and then put the dough in the chiller, rest the dough in 10minutes.
- After that, brush the dough with egg wash (eggyolk+milk) and stick the dough using a fork
so that the mixture does not bubble when we baked it. Dont bake it too long because we just need it half cooked because we must add the filling in the dough.
- For make the Filling, first step is mixed the cream cheese and sugar used HandMixer, after that add the eggs, and then add the heavy cream and mixed until fluffy, and the last step is add the flour and lemon zest and mixed until well mixed.
- For the frosting the first step is boli the Heavy cream, sympel syrup, and gelatin.
