Halo guys, so for this time my practice material is cookes about how to make nicely sponge cake.
because in the next practice im gonna make mirror glaze cake. so this time we gonna prepare for the sponge cake.
The nicely sponge cake is the texture must be soft not hard. and there is a small hole in the cake. so im gonne tell you how to make spong cake.


Ingredients :
15 pcs    egg yolks
5 pcs      egg white
200 gr    sugar
100 gr    flour
25 gr      corn strach
20 gr      milk powder
15 gr      tbm
75 gr      melted butter
2 tsp       chocolate paste
25 gr      chocolate powder
How to Make :
1. prepare all ingredients and tools.
2. mix egg yolk, egg white, tbm and sugar untl stiff.
3. after that add flour, corn strach, chocolate powder and milk powder. mix manual
4. add melted butter and chocolate paste mix until well.
5. mould and bake in temperature 170 c in 15-20 minutes.
 
After that, we gonna make bread from sour dough. before we make the bread, the first thing we must prepared is leaven. im gonna tell you how to make laeven.
 

Ingredients :
1 tsp sour dough
75 gr water
75 gr hard flour

How to make :
1. mix all ingredients.
2. keep in 12 hour.
 
After the leaven is ready, so the next step is maked the bread.

Ingredients :
leaven
250 gr hard flour
200 gr fat
7,5 gr salt
300 gr water

How to Make :
1. dissolve salt with 50 gr water.
2. mix all ingredients except dissolve salt.
3. knead the dough but no until well
4. keep in the temperature room in 1 hour.
5. mix the dough and add dissolve salt little by little.
6. proofing the dough in 20 minutes.
7. moulding the dough and the last baking.
